Today was cheat day.. the day I use all the help I can get. With the entire family down with cold and flu, I needed to make something quick and tasty. Good thing I had some Applegate pork kielbasa usages in the fridge. I always have some organic frozen veggies in the freezer – as a fall back option. Last weekend I had picked up a bag from Wholefoods which had zucchini, yellow squash, green beans and carrots in it. All I needed to do was slice some onions and green bell pepper.
This is how I made it: I heated up a pan and fried the sausages a bit till they gave out a little oil. I like them a little charred. Took the sausages out of the pan and to it added about a tablespoon of oil (I used canola). Added the slices of onions and green bell pepper and sauteed well. I added the sliced up the sausages to it (I sliced after these had rested a bit) and tossed. Emptied the bag of frozen veggies (you can add whatever you like) into the pan, stirred, covered and cooked till the veggies were tender. Ate it for dinner with brown rice.
