Sayantani’s Onion Crackers: Know Your Blogger event

I came to know Sayantani through the world of blogosphere about a year back. She came across as a very warm person with an insane amount of talent. A veteran in the food blogosphere, her recipe blog  is a treasure trove of hand-me-down recipes and much more! Choosing a recipe to recreate for the Kolkata Food Bloggers’ Know Your Blogger event, was nothing less than a daunting task for me – since I am absolutely in awe of her. Yesterday was the last day of Durga Puja and as the custom goes,  family members visit the elders to pay their respect by touching their feet. Since my husband’s father is the oldest in the family, each year a lot of guests come over and it is a tradition to serve something sweet and something savory. I thought that the onion crackers would be perfect to be served with the sweets. I made both fried as well as baked versions of the onion crackers.


Ingredients used:
  • Flour – ½ cup
  • Whole wheat flour – 1 cup
  • Onions – 3 small, sliced fine in half-moon shape.
  • Green chilies – 3-4, thinly sliced
  • Curd –  2 tbsp
  • Oil – 4 tbsp
  • Baking powder –  1/3 tsp
  • Baking Soda – 1/8 tsp
  • Kasuri Methi – 11/2 tsp (Sayantani had used sesame seeds)
  • Kashmiri Mirch – 1 tsp (not used in original recipe)
  • Sugar – 1/2 tsp
  • Salt to taste
  • Water – 4-5tbs for making the dough
  • Oil – Enough for frying (for the fried version)

How to:

Mixed together the flours, salt, sugar, baking powder, baking soda, chopped onions and chilies  in a bowl. Crushed the kesuri methi using my palms and added to the mix.  Then added the curd, oil and made a dough. Added water, little at a time till the dough was thick. Kneaded for few minutes. Covered and let the dough rest for about 20-25minutes.
For the baked version: Preheated the oven at 180 C. I used a greased muffin tray to bake my crackers, you can  line a baking tray with greased foil and use it. Made small balls from the dough, placed in the muffin tray and and pressed it down. Punched some holes using a fork and baked for about 20-25 minutes till they turned golden brown.


For the fried version: I rolled out the dough like a roti and cut out circles using a bowl (you can use cookie cutters as well). Using a fork I punched some holes, deep fried till golden brown.

I made little parcels of these crunchy onion crackers using cling wrap and ribbons and gifted these along with ‘mishti (sweets) when my husband and I visited our elders to pay our respect.
