This is for those times when there is nothing, absolutely nothing at home except for some flour, eggs & assorted vegetables. Between shopping for furniture and other necessities there would be hardly any time for shopping for groceries. This was our dinner one night. And it is very easy to make – but very tasty!
- Flour – 4 tbs
- Eggs – 2 at r
- Tomato – 1 tsp, chopped
- Capsicum – 1tbs, chopped
- Onion – 1tbs, chopped
- Coriander – 1 tsp, chopped
- Green Chilies – 1 or 2 thinly sliced
- Salt to taste
- Oil – 1 tsp for the batter and more for frying
- Milk – 2 tbs
- Water – 7-8 tbs or more to reach a runny consistency
In a bowl mix all the above ingredients and whisk well. Add oil to a pan and make sure that the entire surface gets coated nicely. Once the oil is hot enough, add some batter (for better results rest the batter for 30 minutes or so) to the oil and tilt your pan from side to side till the entire pan gets coated. Make sure that the batter is thin or else it will not spread smoothly. Once the crepe start leaving the sides, it is ready to be turned. I usually cook my crepes on medium heat. Serve with ketchup or anything else you want.
