Pumpkin Pie Spice Cookies with Chocolate Chips

The apartment smells wonderful! Cos I am baking some pumpkin pie spice cookies. I have been wanting to make these ever since I tasted some at Wholefoods. I just love pumpkin pie spice. What is not there to love. It has cinnamon, it has cloves, it has nutmeg – all the exotic spices that smells so warm and festive! These cookies were soft and chewy and a nice crumbly texture.

Ingredients:

  • Flour – 1 Cup and 4 tbs
  • Baking Powder – 1/2 tsp
  • Baking Soda – 1/4 tsp
  • Pumpkin Pie Spice – 1 tsp
  • Salt – a pinch
  • Egg – 1 at room temperature
  • Butter – 1 stick, 8 oz at room temperature
  • Sugar – 1/2 Cup, granulated
  • Pureed Pumpkin – 1/2 Cup (I used store bought)
  • Vanilla essence – 1/2 tsp
  • Chocolate Chip – 1/2 Cup, semi-sweet 

Preheat oven to 375F. In a bowl, mix flour, baking powder, baking soda, pumpkin pie spice, salt and keep aside. In a different bowl cream together the butter and sugar. Add the eggs, pumpkin puree and vanilla essence and using a electric hand mixer or fork mix well till smooth. Add in the dry ingredients. Throw in the chocolate chips and incorporate well. The batter is going to be a little sticky. Drop in dollops of batter using 2 tablespoons or a small icecream scoop. I pushed a little chocolate chip in the middle of the dough to make these more enticing for my 4 year old! Bake till the edges turn golden brown. It took me about 15mins. Cool and serve.

  1. Thank you Kichhu… I used store-bought, but it is something you can make at home – it has cinnamon, nutmeg, allspice, ginger powder… and sometimes mace and clove powders too!
