On-the-go wholesome snack that even my 4.75 year old enjoyed plus satiated my 9 pm sugar craving – what more can I ask for! And oh, today’s post is going to be a short one.
Ingredients: (Yield – About 10)
- Quick cooking oats – 1/4 Cup (you can use Quaker oats)
- Dates – about 12-14, pitted (I used Mejdool dates)
- Almonds – 24 or 25
- Pistachio – 14 or 15
- Flax seeds – 2 tbsp (roasted and ground)
In a pan, dry roast the oats, almonds and pistachio separately for couple of minutes each. Pulse the roasted oats, almonds and pistachio in the food processor, preferably separately till coarsely ground and transfer to a bowl. Do not ground into a fine powder. If you are using flax seed powder then roast it as well. Now, chop the dates finely and give it a few quick pulses in the food processor. Now mix together the coarsely ground oats, coarsely ground nuts (almonds and pistachios) and flax seeds. Add the dates to the oats mix and knead it into a dough till everything gets incorporated. Divide into 10 equal sized balls and form the laddus using the palms of your hands. Store in an airtight container. These will stay fresh for at least a week.
Notes: You can add walnuts too, just adjust the amount of nuts. I did not as I am allergic.
