Once school reopens in August, the 6.5 yo will start Second Grade. So this summer vacation is all about having fun with some work thrown in. We have signed him up for the Summer Reading Program at our local library and he is learning his tables. He started with Roald Dahl and is reading with gusto.
Today we shot the video for the series #BakingwithSoh. He did awesome. Me (behind the lenses), not so much. But will definitely share a link to the video once I manage to edit it.
Ingredients: (Serves 2)
- Banana – 2, ripe cut into 1 inch slices and frozen
- Nutella – 3 tbsp
- A splash of vanilla
Cut the bananas into 1 inch pieces and freeze for at least 30 minutes (or till frozen). I put the slices in a Ziploc bag, alternatively you can arrange the pieces in a single layer on a cookie sheet and stick that into the freezer.
Blitz the frozen banana slices in a food processor till smooth. Scrape the sides from time to time. Add dollops of Nutella and a splash of vanilla. Pulse till everything comes together in a creamy mixture and starts looking like ice cream.
The texture was more like a soft serve. Serve it right away or freeze it in an airtight container.
I am sure it tasted a-okay judging by the speed the 6.5 yo devoured it! It sure smelled good! I couldn’t taste it since I am allergic to hazelnuts and bananas give me a tummy ache. *insert sad face*
