Hot! Hot! Hot! That’s how it has been these past few days! The almost 6 3/4 year old has been spending a lot of time in the pool. Other times, he is home and there is a constant demand for snacks. I find myself quickly running out of options. Sometimes, he just doesn’t want to snack on fruits or string cheese. That is when these 1-minute Mug Cake recipes and made ahead frozen treats come in super handy!
I am including this One minute Almond Butter Mug Cake in the microwave in our (PG of A Whiff of Spice and mine) Ode to Summer series, since this one is quick & easy and a perfect summer snack!

Summers were hot and humid in Kolkata. We would have a 5-week long vacation during summer. My Ma would wake up early and get done with her morning chores before it would get too hot. Meals would be simple, mildly spiced and include loads of summer veggies. Afternoons were for siestas. The humming noise of the ceiling fans would set in a dull monotony and lull me to sleep.
There weren’t any air-conditioning and we had to rely solely on the cool breeze from the ceiling fans, provided the power was on. Come summer, there would be severe shortage of power supply and more often than not, there would be hour-long power cuts.
I remember sitting down to do my homework or read a book in the light of the candle, while my Ma would fan herself and me with a handheld fan made of palm leaves. I remember that I used to spend hours making shadow puppets in the dancing light cast by the flames of a candle or two, waiting for my Baba to get back home from work.
Those were the days! Carefree and happy!
This one-minute microwavable Almond Butter Mug Cake got a thumbs up from the kiddo! Of course I threw in some chocolate chips in his.
Almond Butter Mug Cake recipe uses very few ingredients which are mostly available in our pantry and pairs very well with a cup of chilled almond milk – both the 6 3/4 yo and I are allergic to cow’s milk.
Ingredients: (Serves 1)
- Almond Butter – 3 tbsp
- Flour – 2 tbsp
- Cocoa Powder – 1/2 tbsp
- Almond Milk – 4 tbsp
- Brown Sugar – 1/2 tbsp (I used coconut sugar)
- Baking Powder – 1/4 tsp
- A splash of vanilla
- A pinch of salt
- Chocolate Chips – 2 tsp (optional)
Whisk everything (except for chocolate chips, if using) together in a microwave safe big mug. Fold in the chocolate chips (optional).
Cook on high for a minutes and check if it is done. Cooking time will vary depending on your microwave. Add cooking time in increments of 10 to 15 seconds till done.
Let it cool completely before serving.

One query.. Cook on high means.. Does that mean no preheating… I didnt get that..

Hi Radhika! Thanks for checking out the recipe! By cooking on high I meant the power level of the microwave. There is no preheating involved since you will be using the microwave mode.
