Watermelon Lime Soda – Summer Cooler to beat the heat
Ingredients for Watermelon Lime Soda (Serves 2)
3 Cups of diced watermelon
Juice of a lime
1/2 inch ginger roughly chopped
1/2 cup of sugar
1/3 cup of water
Mint sprigs for garnish
Club Soda to top off
Handful of ice
How to make Watermelon Lime Soda
In a small saucepan, bring the sugar-water and ginger to a boil over medium heat. Lower the heat and let it simmer till the sugar dissolves. Let it cool down completely, strain and set it aside. Discard the ginger bits or if you love ginger as much as I do, keep popping bits of it in your mouth.
Now, in a blender, blend the watermelon cubes along with lime juice.
Add some ice cubes to two glasses. Strain the watermelon through a sieve into glasses. Discard the pulp. Next gently stir in the sugar syrup and top it up with club soda. Garnish the Watermelon Lime Soda with a sprig of fresh mint and serve immediately.
