The almost 5 year old asked for some cake after lunch today! Since it is his birthday this weekend (he turns 5!!!) I did not have the heart to say no or offer substitutes like frozen yogurt or cookies. Then I thought of looking up a cake recipe in a mug using Oreo Cookies. I searched on the net and stumbled upon this! So while he played with his toys on the sofa I set off to bake him a Cake in a Mug! In a minute – plus a few for prepping! And it is eggless!
Ingredients:
- All Purpose Flour – 1/4 Cup or 4 tbsp
- Baking Powder – 1/4 tsp
- White Chocolate Chips – 1/4 Cup or 4 tbsp
- Milk – 3 tbsp
- Oil – 1/2 tbsp
- Oreo Cookies – 2, crumbled (plus a couple for garnishing)
If you are using two smaller cups, then half the ingredients and divide between 2 cups. I used 2 8 oz ramekins, since I did not have an over sized microwave-safe coffee mug.
Combine the chocolate chips and milk in the cup(s) and nuke it for about 40-45 seconds. Give it a whisk to ensure that the chocolate has completely melted. If you feel that it needs more time, microwave it for another 10 seconds. Be very careful as chocolate can burn pretty easily.
Add the flour, baking powder, oil and mix well to make a smooth batter. Using a fork, swirl in the crumbled Oreo cookies in the cups/mug/ramekins (crumble the cookies into small chunks).
Microwave for a minute. Let it cool a little and serve warm.
To make it a more decadent add a scoop of ice-cream, drizzle some chocolate syrup on it and go crazy with the sprinkles!
