It will be raining baked goodies as the members of Kolkata Food Bloggers will be baking up a storm to celebrate the Holiday season with the ‘KFB Baking Palooza 2013’. And what better way to start it than with Double Chocolate Thumbprint Cookie with a Kiss.. well a Hershey’s Kiss in the middle. These will be an instant hit with the kids and also those who are still kids at heart! There is melted chocolate in the batter and everyone’s favorite candy stuck on top – what is there not to love!
Ingredients: For the Cookie
- Flour – 1 1/3 Cup
- Butter – 4 oz, 1/2 stick at room temperature, unsalted
- Sugar – 1 1/3 Cup
- Cocoa – 1/2 Cup, unsweetened
- Baking Soda – 1/4 tsp
- Baking Powder – 1/2 tsp
- Salt – 1/4 tsp
- Eggs – 3, at room temperature
- Vanilla extract – 1 tsp
- Chocolate Chips – 4 oz (for chocolate ganache)
- Instant Coffee Granules – 3/4 tsp
- Hershey’s Kisses – About 20 – 25 pieces
Preheat oven to 350F with the rack in the middle. In a bowl cream together the sugar and butter using a hand mixer till nice and fluffy. Add the cocoa powder a little bit at a time and make sure it is not lumpy. If it is lumpy, then just sift the cocoa powder before adding it. Beat in the eggs one by one and add the vanilla extract. Scrape the sides of the bowl and continue to beat for about 30 seconds.
Melt the chocolate chips in the microwave and add it to the mixture once it has cooled down a bit. Incorporate well and add the flour, baking powder, baking soda, salt and coffee granules (you might want to sift the dry ingredients). Beat for about for a minute or so till everything is nicely incorporated.
Using a mini ice-cream scoop or two tablespoon drop in dollops of the batter onto a cookie sheet lined with parchment paper about inch and a half apart. The cookies will spread once baked.
Bake for about 9-10 minutes. The cookies will puff and crack once baked but don’t worry these will taste awesome. Take out and let these rest on the cookie sheet for about 5 minutes before transferring to wire rack. While these are resting unwrap the Hershey’s Kisses and press those down make in the middle while the cookies are still warm. The Kisses will melt a bit and that will keep it glued it to the cookie.
Stays fresh for upto 5 days in an airtight container.
