It is sweet.. it is slightly tangy… it is cinnamon-y. It is like the warm scent of autumn that fills you up with the anticipation of the chilly winters just round the corner.
- Apple – Grated 2/3 cup
- Pineapple – chopped half cup (I used two rings that were leftover from the Pineapple Upside Down Cake)
- Ground cinnamon – 1 tsp
- Brown sugar – 3 tbs
- Raisins – 10-12
- Cashews – 4-5
- Oil – 1 tsp
- Cinnamon – 1/2 inch
Heat a wok/pan and add oil to it. Temper the oil with the whole cinnamon, and once fragrant, add the grated apple, chopped pineapple, ground cinnamon and brown sugar to it. Cook till the mixture turns darker in color. Add the raisins and cashews (I used halved cashews) and incorporate well. Serve warm with cheese n crackers, or with pork chops or roasted chicken.
